NICOISE SALAD

Ingredients
- 60g confit tuna
- 80g cooked new potatoes
- 60g cooked green beans
- 60g cherry tomatoes
- 30g olives
- 1/2 boiled egg
- 10g balsamic vinegar
- 20g olive oil
- 10g dijon mustard
- salt
- pepper
Instructions
- In a small bowl place the mustard, vinegar and olive oil
- Whisk together till an imulsion has formed
- Reserve in the fridge till needed
- Take the new potatoes and cut into bite size pieces
- Cut the cherry tomatoes into halves
- Cut the green beans into bite size pieces
- Arrange all the prepared items on the dish and drissle with the dressing
- Place the 1/2 boiled egg on top along with the olives
- Finish with olive oil and black pepper
