NACHO BEANS
Prep/Cooking Time:
Longer Than 120 Minutes
Ingredients
- 50ml Olive oil
- 2 Large cans red beans
- 1 Large can chopped tomatoes
- 350g Tomato paste
- 12 Cloves garlic
- 6 Onions
- 60g Cumin
- 40g Paprika
- 30g Salt
- 4g Pepper
- 2g Chili flakes
Instructions
- Peel and finely chop the onions and garlic
- Place the olive oil in a thick bottomed pan
- Add the garlic to the pan and cook till starting to turn golden
- Add to the pan the onions and cook till starting to color
- Add to the pan the spices and stir through well
- Add to the pan the tomato paste and mix well
- Add the drained beans and the can of chopped tomatoes
- Bring to the simmer and turn the heat down
- Cook for 1.5 hours stirring regularly
- Once cooked cool and pack for storage
- Freeze until required
- When needed take out the freezer the night before to thaw
- Reheat to order
