MUFFIN BASE

Ingredients

  • 3 kilo AP flour
  • 30 tsp baking powder
  • 5 tsp salt
  • 1.5 kilo sugar
  • 3 tsp vanilla extract
  • 10 eggs
  • 2.5 kilo milk
  • 560g oil

Instructions

  • Sieve together the flour, baking powder and salt
  • Place the sugar, milk, eggs and oil in a large machine mixing bowl
  • Whisk on the machine till well combined
  • Add to the bowl the vanilla extract
  • Add to the bowl the sieved ingredients
  • Mix until no lumps remain. Do not over mix as will become chewy
  • Once well combined and smooth remove from the machine and store in the fridge till needed
  • To serve add whichever flavourings you need
  • Spoon into moulds and bake at 330f in a preheated oven
  • Cook for 12 minutes or until the top is golden and a knife comes out the centre clean
  • Serve immediately
  • If chilled after cooking flash in the oven before serving so are not fridge cold
