Ingredients

  • 1 kilo peeled garlic
  • 500g oil
  • 5 large limes
  • 2 can chipotle chil (Adobo)
  • Salt
  • Pepper

Instructions

  • Place the peeled garlic in a small pan and cover with the oil
  • Heat over a medium gas until starting to bubble
  • Turn to low gas and cook until garlic begins to turn golden
  • Remove from the heat and pour off the oil
  • Place the garlic in a bowl and add to it the lime juice and chipotle
  • Roughly blend to acheive a rough paste
  • Season to taste with salt and pepper
  • Leave to cool
  • Reserve in the fridge till needed
