MIXED OLIVES AND PICKLES

Ingredients

  • 2 Kilo Green queen olives
  • 1 Kilo Black olives
  • 500g Cornichons
  • 120g Capers
  • 2 Oranges
  • 1 Lemon
  • 5 Cloves Garlic
  • 4 Finger Chilis (red)
  • 2 Stems rosemary
  • 10 Sprigs thyme
  • 200ml Olive oil

Instructions

  • Place all the pickles and olives in a bowl
  • Take the orange and lemon and peel the zest into the olives
  • Peel the garlic and smash it
  • Roughly chop the chilis and add both the garlic and chili to the olives
  • Add the herbs and the olive oil to the bowl
  • Mix well and place in a container to store
  • Keep in the fridge till needed
