MIXED OLIVES AND PICKLES

- 2 Kilo Green queen olives
- 1 Kilo Black olives
- 500g Cornichons
- 120g Capers
- 2 Oranges
- 1 Lemon
- 5 Cloves Garlic
- 4 Finger Chilis (red)
- 2 Stems rosemary
- 10 Sprigs thyme
- 200ml Olive oil
Instructions
- Place all the pickles and olives in a bowl
- Take the orange and lemon and peel the zest into the olives
- Peel the garlic and smash it
- Roughly chop the chilis and add both the garlic and chili to the olives
- Add the herbs and the olive oil to the bowl
- Mix well and place in a container to store
- Keep in the fridge till needed
