MIXED BERRY MOUSSE

Ingredients

  • Frozen mixed berries
  • Cream
  • Sugar
  • Milk
  • Gelatin
  • Egg white

Instructions

  • Defrost the mixed berries and place in a bowl
  • Place the milk in a thick bottom pan and warm over a medium gas
  • Place the gelatin in cold water and leave till is softened
  • Once softened drain and add to the milk
  • Remove from the heat
  • Once the gelatin in melted strain the milk through a sieve and leave to cool
  • Place the sugar in a thick bottom pan and boil to soft ball
  • Pour the egg whites into a whisking bowl and begin to whisk on a low setting
  • Once the sugar is cooked pour down the side of the bowl to incorporate with the egg whites
  • Once all the sugar is added increase the speed gradually to high 
  • Whisk the eggs until firm peaks are formed and then continue to whisk until cold
  • Now whisk the cream to form soft peaks 
  • Once all stages are complete it is time to combine them all together
  • Add the whipped cream to the berries and the milk
  • Then fold through the egg whites
  • Fold till a consistent color is achieved
  • Pour into the desired mold and leave in the fridge to set
