MIXED BERRY MOUSSE
Prep/Cooking Time: 45-60 Minutes

- Frozen mixed berries
- Cream
- Sugar
- Milk
- Gelatin
- Egg white
Instructions
- Defrost the mixed berries and place in a bowl
- Place the milk in a thick bottom pan and warm over a medium gas
- Place the gelatin in cold water and leave till is softened
- Once softened drain and add to the milk
- Remove from the heat
- Once the gelatin in melted strain the milk through a sieve and leave to cool
- Place the sugar in a thick bottom pan and boil to soft ball
- Pour the egg whites into a whisking bowl and begin to whisk on a low setting
- Once the sugar is cooked pour down the side of the bowl to incorporate with the egg whites
- Once all the sugar is added increase the speed gradually to high
- Whisk the eggs until firm peaks are formed and then continue to whisk until cold
- Now whisk the cream to form soft peaks
- Once all stages are complete it is time to combine them all together
- Add the whipped cream to the berries and the milk
- Then fold through the egg whites
- Fold till a consistent color is achieved
- Pour into the desired mold and leave in the fridge to set
