MIXED BERRY JELLY
Prep/Cooking Time: 30-45 Minutes

- 60g Raspberries
- 60g Blackberries
- 60g Blueberries
- 60g Strawberries
- 40ml White wine
- 60g Sugar
- 1 Vanilla bean
- 4 leaves Gelatin
- 500ml Grape juice
Instructions
- Place the berries in a tray and keep above the cooking line so they warm up
- Cut the strawberries into 1/4s
- Place the white wine in a saucepan along with the grape juice and the sugar
- Bring to the boil over a high gas
- Once boiled reduce the heat to low and add the vanilla
- Once the vanilla is added remove from the heat and keep on the side
- Place the gelatin in cold water to soften
- Once the gelatin is softened stir in to the wine mix
- Strain the liquid through a fine sieve
- Cool the mix until it is warm to the touch
- Carefully spoon the berries into the molds till they are 3/4 the way up the side
- Slowly pour in the liquid and tap the mold to release any bubbles
- Fill the mold to 1/4" from the top of the mold
- Once filled place the jelly, covered with film in the fridge to set
- Once set keep in the fridge till needed
