MINCE PIE FILLING
Prep/Cooking Time: Longer Than 120 Minutes

- 450g Apple
- 4 tsp Mixed spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 6 tbsp Brandy
- 225g Suet (vegetarian)
- 350g Raisin
- 230g Sultanas
- 230g Currants
- 230g Candied peel
- 350g Brown sugar
- 2 Whole oranges
- 2 Whole lemons
Instructions
- Wash the apples and remove any labels and or bruised flesh
- Grate the apple into a large mixing bowl
- Add to the apple all other ingredients apart from the Brandy
- Mix together well so all ingredients are evenly disbursed
- Place the mix in a thick bottomed pan and bring to the simmer over a medium heat
- Cook the mix for 2-3 hours or until the majority of the liquid has evaporated
- (The mix will be exceptionally oily. This is how it is supposed to be)
- Once cooked remove from the heat and add the brandy
- Leave to cool naturally if intended to use immediately
- If you wish to preserve till later date then follow canning procedure
- Once cool keep in the fridge till needed or if canned store in a cool dry place
