MARINATED SQUID
Prep/Cooking Time: 15-30 Minutes

- 300g Squid
- 15g Smoked paprika
- 1 clove Garlic
- 80g White onion
- 40ml White wine vinegar
- 80g Green onions
- 80g Bell peppers
- 60g Olive oil
- Salt
- Pepper
Instructions
- Clean the squid and rinse
- Cut the squid into slightly larger pieces than bite size
- Place the squid pieces in a bowl and add to it the paprika
- Leave to marinate for a minimum of 30 minutes
- Whilst the squid is marinating Peel and de-seed all of the vegetables
- Once cleaned finely slice the garlic and onion
- Cut the bell pepper and green onion a little thicker than the onion and garlic
- Once all the veg are prepared place a frying pan over a high heat
- Add the olive oil to the pan and as soon as the oil smokes add the calamari and garlic to the pan
- As soon as the calamari is "just" cooked remove from the heat
- Tip the calamari into a bowl and add to it the onion, bell pepper and green onion
- Add the vinegar to the bowl mix through
- Season to taste whilst still hot
- Cover tightly with a lid or plastic and leave to cool naturally
- Once cool check seasoning and reserve in the fridge
