LOBSTER ROLL

Ingredients

  • 2 Lobster tails
  • 120g Mayonnaise
  • 1 Lemon
  • 1 Stick celery
  • 2 Green onions
  • 1/4 Cucumber (de-seeded)
  • Pinch Chili flakes
  • 1g Salt (then to taste)
  • 1g Pepper
  • 1 Hot dog bun
  • Portion of fries

Instructions

  • Boil the lobster tails for 6 minutes in salted water
  • Remove the shell and any grit line
  • Rouchly chop and place in a mixing bowl with the lemon juice and mayonnaise
  • Peel the cucumber and finely dice
  • Wash the celery and finely dice
  • Wash the green onions and finely chop
  • Add all the ingredients together and mix well
  • To serve cut and warm the bun
  • Spoon the split bun full with the lobster mix
  • Serve with a side of fries
