LIGHTLY PICKLED CUCUMBERS
Prep/Cooking Time: 0-15 Minutes

- 4 ea cucumbers
- 1 tbsp salt
- 3 tbsp sugar
- 9 tbsp white vinegar
- 1 tbsp dill (optional)
- peel the cucumber and remove the ends
- cut the cucumbers into 5mm thick discs
- place the cucumber in a bowl and add the salt sugar and vinegar
- combine well and leave to marinate for 3 hours stirring occasionally
- once marinated they are ready to serve
- if using the dill remove the stems and chop roughly before adding
