LIGHTLY PICKLED CUCUMBERS

Ingredients

  • 4 ea cucumbers
  • 1 tbsp salt
  • 3 tbsp sugar
  • 9 tbsp white vinegar
  • 1 tbsp dill (optional)
Instructions

  • peel the cucumber and remove the ends
  • cut the cucumbers into 5mm thick discs
  • place the cucumber in a bowl and add the salt sugar and vinegar
  • combine well and leave to marinate for 3 hours stirring occasionally 
  • once marinated they are ready to serve
  • if using the dill remove the stems and chop roughly before adding
