Ingredients

  • Lobster tail
  • 100g cherry tomatoes
  • 7 scallions
  • 1 clove garlic
  • 30ml white wine 
  • 40ml marinara sauce
  • 10g butter
  • 2g tarragon
  • 20ml olive oil
  • salt
  • pepper

Instructions

  • Brush the lobster tail with olive oil and season with salt and pepper
  • Place on the chargrill and cook till marked, move to the oven to cook through
  • Heat the oil in a pan and add the peeled sliced garlic
  • Once starting to color add to the pan the scallions
  • Cook till slightly colored then add the halved cherry tomatoes to the pan
  • Saute for a minute then add to the pan the white wine
  • Cook till the wine has evaporated then add the marinara sauce 
  • Simmer and add the butter and tarragon
  • Season to taste and serve immediately
