HALLOUMI WITH CHERRY TOMATO & SPINACH
Prep/Cooking Time: 15-30 Minutes

- 120g halloumi
- 10g garlic
- 20g olive oil
- 100g cherry tomatoes
- 12g pinenuts
- 80g local spinach
- 80g button mushrooms
- 8g balsamic
- salt
- pepper
Instructions
- Remove the halloumi from the pack and rinse
- keep at room temperature before cooking
- Peel and finely chop the garlic
- Wash the cherry tomatoes and cut into halves
- Wash the mushrooms slice thinly
- Wash the spinach and remove any stems
- Heat 1 large pan to a high temperature
- Add the oil and the halloumi
- Cook the halloumi till golden then turn over
- Add to the pan the garlic quickly followed by the mushrooms
- Once the mushrooms are tender add the cherry tomatoes & pinenuts
- Remove the halloumi from the pan and keep hot
- Add to the pan the spinach and toss through
- Season to taste
- Once cooked and seasoned spoon onto a plate and top with the halloumi
