HALLOUMI WITH CHERRY TOMATO & SPINACH

Ingredients

  • 120g halloumi
  • 10g garlic
  • 20g olive oil
  • 100g cherry tomatoes
  • 12g pinenuts
  • 80g local spinach
  • 80g button mushrooms
  • 8g balsamic
  • salt
  • pepper

Instructions

  • Remove the halloumi from the pack and rinse
  • keep at room temperature before cooking
  • Peel and finely chop the garlic
  • Wash the cherry tomatoes and cut into halves
  • Wash the mushrooms slice thinly
  • Wash the spinach and remove any stems
  • Heat 1 large pan to a high temperature
  • Add the oil and the halloumi
  • Cook the halloumi till golden then turn over
  • Add to the pan the garlic quickly followed by the mushrooms
  • Once the mushrooms are tender add the cherry tomatoes & pinenuts
  • Remove the halloumi from the pan and keep hot
  • Add to the pan the spinach and toss through
  • Season to taste
  • Once cooked and seasoned spoon onto a plate and top with the halloumi
