HALLOUMI BREAKFAST BUN

Ingredients

  • 1 seeded burger bun
  • 120g Polly halloumi
  • 40g tomato
  • 40g button mushroom
  • 20g sundried tomatoes
  • 20g olive oil
  • 2g salt
  • 1g pepper
  • 40g dill pickle 

Instructions

  • Peel, core and cut in half the tomato and place on the griddle to cook
  • Wash and trim the mushrooms then add to the griddle with a little olive oil 
  • Cook the tomato till starting to colour and the mushrooms till cooked through
  • Whilst cooking place the sundried tomatoes and the remaining oil into the blender and pulse till a thick paste is acheived
  • Drain and pat dry the halloumi
  • Place on the hottest part of the griddle with a little oil
  • Cook till golden on both sides
  • Cut the bun in half and toast
  • Place the tomato and mushrooms on the bottom of the bun and top with the halloumi
  • Spread the top of the halloumi with the sundried tomatoes
  • Add the seeded top and skewer with a stick
  • Serve with a half doill pickle on the side
