HALLOUMI & AVOCADO BREAKFAST

Ingredients

  • 80g Halloumi
  • 1/2 Avocado
  • 60g Mushrooms
  • 1 Tomato
  • 80g Baked beans
  • 2 Slices sourdough toast
  • Butter
  • Olive oil
  • Salt
  • Pepper

Instructions

  • Remove the core from the tomato and cut in half
  • Remove the stems from the mushrooms and place on a tray along with the tomato halves
  • Drizzle with olive oil and add seasoning
  • Cook in the oven till 3/4 cooked
  • Whilst the tomatoes and mushrooms are cooking heat a pan over a high heat
  • Add to the pan a little olive oil followed by the halloumi
  • Cook the halloumi on both sides until golden
  • Heat the beans in a small pan and toast the sourdough
  • Once all items are ready plate them
  • Add to the plate the sliced half avocado
