GUACAMOLE
Prep/Cooking Time: 0-15 Minutes

- 3 Ripe avocados
- 1/2 Red onion
- 2 Limes
- 1 Chili pepper
- 1/2 Bunch cilantro/Coriander
- Olive oil
- Salt
- Black pepper
Instructions
- Finely chop the red onion and place into a mixing bowl
- Cut the limes in half and juice them, add the juice to the onions
- Remove the stem and de-seed the chili
- Cut the chili into as small dice as possible and add to the bowl
- Cut the avocados in half and remove the stone
- With a spoon cut the flesh inside the skin before scooping out and adding to the bowl
- Wash the cilantro removing any bad leaves or root
- Dry the cilantro on paper towel and roughly chop leaving the stems in, add to the bowl
- Add a spoon of olive oil (helps to keep from losing color)
- Mix well and add salt and pepper to taste
- Once ready clean the sides of the bowl and press clingfilm onto the top of the mix
- Make sure there are no gaps as the air will cause the guacamole to turn brown and spoil
