GRILLED SAUSAGE SANDWICH

Ingredients
- 2 Cumberland sausages
- 10ml olive oil
- 1 small red onion
- 15g sugar
- 30ml red wine vinegar
- Salt
- Pepper
- 1 6" crusty roll
- 10g butter
- 10g rocket
Instructions
- Peel the onion and finely slice
- Place the oil in a frying pan
- Heat over a high gas and add to the pan the sliced onions
- Saute to color
- Ass color is achieved add to the pan the sugar and toss through
- Once sugar has begun to caramelize add the vinegar
- Lower the gas and cook till all liquid has dissipated
- Whilst the onions are cooking fry the sausages in a separate pan
- Once cooked through cut the sausages from top to bottom
- Warm the roll and slice down the middle
- Butter the top and bottom of the roll and place the rocket on the bottom
- Place the sausages on the rocket and top off with the onions
- Add the top of the bun and hold in place with flags
- Serve immediately with French fries
