GRILLED SAUSAGE SANDWICH

Ingredients

  • 2 Cumberland sausages
  • 10ml olive oil
  • 1 small red onion
  • 15g sugar
  • 30ml red wine vinegar
  • Salt
  • Pepper
  • 1 6" crusty roll
  • 10g butter
  • 10g rocket

Instructions

  • Peel the onion and finely slice
  • Place the oil in a frying pan
  • Heat over a high gas and add to the pan the sliced onions
  • Saute to color
  • Ass color is achieved add to the pan the sugar and toss through
  • Once sugar has begun to caramelize add the vinegar
  • Lower the gas and cook till all liquid has dissipated
  • Whilst the onions are cooking fry the sausages in a separate pan
  • Once cooked through cut the sausages from top to bottom
  • Warm the roll and slice down the middle 
  • Butter the top and bottom of the roll and place the rocket on the bottom
  • Place the sausages on the rocket and top off with the onions
  • Add the top of the bun and hold in place with flags
  • Serve immediately with French fries
