GREEN BEANS WITH BROWN BUTTER

Prep/Cooking Time: 15-30 Minutes

Ingredients

  • 500g green beans
  • 200g onion
  • 40g olive oil
  • 60g butter
  • salt
  • pepper

Instructions

  • Fill a thick bottomed pan with water and season well
  • Bring to the boil
  • Top and tail the green beans and remove any imperfections
  • Once the water has boiled add the beans and cook till to the bite
  • Once cooked cool in iced water and reserve in the fridge till needed
  • Finely dice the onion
  • Heat a sautee pan on the stove and add to it the olive oil
  • Add the chopped onions to the pan and sautee till starting to turn golden
  • Once the onions are ready add to the pan the butter
  • Whilst the butter is melting re-heat the beans
  • Once the butter has melted and is starting to turn brown add the beans to the pan
  • Toss through and season with the salt and pepper
  • Transfer to a serving dish
