GOAT CHEESE SALAD WITH PICKLED PEAR

Ingredients
- 120g goats cheese
- 60g pear
- 20g white vinegar
- 10g sugar
- 60g pecan nuts
- 1 egg white
- 10g sugar
- 2g salt
- 1g parpika
- 40g dried cranberries
- 120g arugula
- 40g romaine
- 60g lemon
- 40g olive oil
- salt
- pepper
Instructions
- Peel the pear and slice as thinly as possible
- Place in a small bowl and add to it the sugar and vinegar
- Mix well, cover and leave to stand
- Place the eggwhite in a bowl and add the pecans
- Toss through and add the salt, sugar and paprika
- Bake in a 300f pre-heated oven for 20 minutes
- Remove from the oven and leave to cool naturally
- Wash the arugula and romaine, finely slice the romaine and reserve till needed
- To serve
- Place the arugula and romaine in a bowl
- Add to the bowl the pear, toasted nuts and dried cranberries
- Toss through
- Dress the salad with the lemon juice and olive oil
- Season to taste
- Place the salad in a serving dish and top with the crumbled goat cheese
