GOAT CHEESE (BANON AOP), ORANGE AND SESAME SALAD

Ingredients
- 50g Banon AOP goat cheese
- 50g rocket
- 1 whole orange
- 12g red onion
- 20g croutons
- salt
- pepper
- 2g sesame oil
- 10g orange juice
- 10g olive oil
- 5g dijon mustard
Instructions
- Peel the orange and remove the segments from the pith
- (whilst removing the segments catch all the juice in a bowl as you will need it for the dressing)
- Place the orange segments and juice in the fridge till needed
- Wash the rocket and spin or pat dry
- Slice the red onion as thinly as possibel and reserve in the fridge along with the rocket
- For the dressing place the mustard, juice, olive oil and sesame oil in a mixing bowl
- Whisk together till an emulsion is formed
- Place the dressing in a bottle and reserve in the fridge till needed
- Place the rocket in a bowl and add to it the orange segments and sliced onions
- Add the croutons and toss through
- Drizzle with dressing and add seasoning to taste
- Toss together and place on the serving dish
- Crumble the goat cheese over the top of the salad and serve
