GADO GADO DRESSING

- 120g Peanut butter
- 80g Coconut milk
- 5g Lemon juice
- 10g Sugar
- 25g White wine vinegar
- A pinch of Chili flakes
- 2.5g Fish sauce
- 10g Soy sauce
Instructions
- Place the vinegar and sugar in a bowl and add to it the chili flakes
- Leave to sit till all the sugar has dissolved
- Once the sugar has dissolved add to the bowl the coconut milk
- Mix together
- Now spoon in the peanut butter and blend with an immersion blender till smooth
- Season the mix with the the soy and fish sauce
- Once smooth and well emulsified place in a container
- Reserve in the fridge till needed
