GADO GADO DRESSING

Ingredients

  • 120g Peanut butter
  • 80g Coconut milk
  • 5g Lemon juice
  • 10g Sugar
  • 25g White wine vinegar
  • A pinch of Chili flakes
  • 2.5g Fish sauce
  • 10g Soy sauce

Instructions

  • Place the vinegar and sugar in a bowl and add to it the chili flakes
  • Leave to sit till all the sugar has dissolved
  • Once the sugar has dissolved add to the bowl the coconut milk
  • Mix together
  • Now spoon in the peanut butter and blend with an immersion blender till smooth
  • Season the mix with the the soy and fish sauce
  • Once smooth and well emulsified place in a container 
  • Reserve in the fridge till needed
