FRIED EGG WITH GREEN VEGETABLE HASH

Ingredients

  • 330g Sweet potato
  • 160g Brocolli
  • 120g Spinach
  • 2 Egg whites
  • Salt to taste
  • Pepper to taste
  • 4 Eggs
  • 20g Olive oil

Instructions

  • Place the sweet potato in a pan and cover with water
  • Add salt to the pan and bring to the boil
  • Cook the sweet potato till tender then remove from the heat and leave to cool naturally
  • Blanch the brocoli in salted boiling water then cool in cold water
  • Wash the spinach and cook quickly in a pan with a splash of water
  • Once wilted remove from the heat and cool
  • Peel the sweet potato and place in a mixing bowl
  • Crush the sweet potato with a fork till pureed but still a little chunky
  • Chop the brocoli and add to the bowl
  • Squeeze away any excess water from the cooled spinach then roughly chop and add to the bowl
  • Separate the eggs and add the whites to the bowl
  • Mix well
  • Season with the salt and pepper to taste
  • Once well seasoned coat the griddle with the oil
  • Spoon the mix onto the griddle in 4 equal amounts
  • On the griddle crack the eggs and cook sunny side up
  • After 3 minutes turn the sweet potato mix 
  • Cook for another couple minutes till coloured on both sides
  • Carefully remove the hash from the griddle and place in the center of a plate
  • Place the fried egg on top
  • Serve immediately
