FRIED EGG WITH GREEN VEGETABLE HASH

Ingredients
- 330g Sweet potato
- 160g Brocolli
- 120g Spinach
- 2 Egg whites
- Salt to taste
- Pepper to taste
- 4 Eggs
- 20g Olive oil
Instructions
- Place the sweet potato in a pan and cover with water
- Add salt to the pan and bring to the boil
- Cook the sweet potato till tender then remove from the heat and leave to cool naturally
- Blanch the brocoli in salted boiling water then cool in cold water
- Wash the spinach and cook quickly in a pan with a splash of water
- Once wilted remove from the heat and cool
- Peel the sweet potato and place in a mixing bowl
- Crush the sweet potato with a fork till pureed but still a little chunky
- Chop the brocoli and add to the bowl
- Squeeze away any excess water from the cooled spinach then roughly chop and add to the bowl
- Separate the eggs and add the whites to the bowl
- Mix well
- Season with the salt and pepper to taste
- Once well seasoned coat the griddle with the oil
- Spoon the mix onto the griddle in 4 equal amounts
- On the griddle crack the eggs and cook sunny side up
- After 3 minutes turn the sweet potato mix
- Cook for another couple minutes till coloured on both sides
- Carefully remove the hash from the griddle and place in the center of a plate
- Place the fried egg on top
- Serve immediately
