FRANGIPAN TART

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 250g Butter
  • 250g Sugar
  • 4 Eggs
  • 180g Ground almonds
  • 1 tsp Vanilla
  • 70g Plain flour
  • Tart shells
  • Strawberry jam
  • Flaked almonds

Instructions

  • Place the butter and sugar in a machine mixing bowl
  • Place the bowl on the machine with a paddle
  • Mix on medium speed till a pale color has been achieved
  • Whilst still mixing add the eggs one by one so they are incorporated into the butter mix
  • Once all the eggs have been added remove the bowl from the mixer
  • Add to the bowl the sieved flour, ground almonds and vanilla essence
  • Fold all the ingredients together until smooth
  • Once well mixed transfer to a storage container and reserve in the fridge till needed

 

  • To cook the tarts place the empty shells on a lined baking sheet
  • Spoon a little of the strawberry jam into the bottom of each case
  • Spoon the almond mix into a piping bag
  • Pipe the mix carefully into each tart shell leaving about a 1/4" from the top
  • Sprinkle with the flaked almonds
  • Place the tarts in a pre heated oven at 180c
  • Cook for 8-12 minutes until the sponge raises above the tart rim
  • Remove from the heat and leave to cool naturally
  • To serve sprinkle with powdered sugar
