FLAMED PEPPER CHUTNEY

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 190g Red onion
  • 350g Roma tomato
  • 60g Olive oil
  • 4 flame roasted bell peppers
  • 40g Tomato paste

Instructions

  • Heat the oil in a thick bottom pan
  • Add to the pan the finely chopped onion and garlic
  • Cook over a low gas until softened
  • Add to the pan the diced tomato and cook till the tomatoes are breaking apart
  • Add the diced peppers and the tomato paste
  • Cook for 1 hour
  • Once a thickened consistency is achieved it is ready
  • Remove from the heat
  • Cool and refrigerate till needed
