FLAMED PEPPER CHUTNEY

Ingredients
- 190g Red onion
- 350g Roma tomato
- 60g Olive oil
- 4 flame roasted bell peppers
- 40g Tomato paste
Instructions
- Heat the oil in a thick bottom pan
- Add to the pan the finely chopped onion and garlic
- Cook over a low gas until softened
- Add to the pan the diced tomato and cook till the tomatoes are breaking apart
- Add the diced peppers and the tomato paste
- Cook for 1 hour
- Once a thickened consistency is achieved it is ready
- Remove from the heat
- Cool and refrigerate till needed
