CRISPY CHICKEN NOODLES

- 1 portion breaded chicken
- 1 packet Udon noodles
- 80g choi sum
- 10g red chili
- 40g radish
- 40g carrot
- 20g green onions
- 4g sesame seeds
- 10g chicken powder
- 100g water
- 40g butter
- 20g chili oil
Instructions
- Peel the carrots and radish and cut lengthways into 1/4s
- Then cut the carrots and radish into thin slices
- Wash the choi sum and lightly steam
- Cool and reserve till needed
- Finely slice the chili and green onions
- Place the breaded chicken in the fryer to cook through
- Place the chicken powder and water in a pan
- Bring to the boil then add the carrots, radish and choi sum
- Once lightly cooked add the udon noodles and the butter
- Simmer for 2 minutes
- Add the chili and green onions and season to taste
- Transfer to a bowl and place the sliced chicken on top
- Finish with the chili oil
