CRISPY CHICKEN NOODLES

Ingredients

  • 1 portion breaded chicken
  • 1 packet Udon noodles
  • 80g choi sum
  • 10g red chili
  • 40g radish
  • 40g carrot
  • 20g green onions
  • 4g sesame seeds
  • 10g chicken powder
  • 100g water
  • 40g butter
  • 20g chili oil

Instructions

  • Peel the carrots and radish and cut lengthways into 1/4s
  • Then cut the carrots and radish into thin slices
  • Wash the choi sum and lightly steam
  • Cool and reserve till needed
  • Finely slice the chili and green onions
  • Place the breaded chicken in the fryer to cook through
  • Place the chicken powder and water in a pan
  • Bring to the boil then add the carrots, radish and choi sum
  • Once lightly cooked add the udon noodles and the butter
  • Simmer for 2 minutes
  • Add the chili and green onions and season to taste
  • Transfer to a bowl and place the sliced chicken on top
  • Finish with the chili oil
