CREMA CATALANA

Ingredients
- 500ml Milk
- 1 Orange zest
- 1 Lemon zest
- 1 Vanilla pod
- 7 Egg yolks
- 110g Sugar
- 10g Corn flour
Instructions
- Place the milk into a thick bottom pan and add to it the orange and lemon zest
- Add to the pan the split vanilla pod and bring the milk to the boil
- Once the milk has boiled simmer for 5 minutes
- In a bowl mix together the egg yolks, sugar and cornflour
- Pour 1/3 of the milk onto the eggs and mix well
- Return to the milk in the pan and cook over a low heat until the mixture will coat the back of a spoon.
- When consistency is acheived strain the mix into a container and leave to cool
- When slightly cooled pour into the moulds and reserve in the fridge to set
- To serve top with a small amount of sugar and caramelize
