COUS COUS, WATERCRESS & GOAT CHEESE SALAD

- 160g cooked cous cous
- 20g red wine vinegar
- 20g olive oil
- salt
- pepper
- 80g watercress
- 80g cooked mushrooms
- 20g green onions
- 60g goat cheese
Instructions
- Place the cous cous in a mixing bowl with the olive oil and red wine vinegar
- Stir through
- Add to the bowl the picked watercress with any large stems removed
- Add to the bowl the cooked mushrooms and the sliced green onions
- Toss well and season to taste
- Spoon the salad into a bowl
- Crumble the goat cheese over the top of the salad
