COUS COUS, WATERCRESS & GOAT CHEESE SALAD

Ingredients

  • 160g cooked cous cous
  • 20g red wine vinegar
  • 20g olive oil
  • salt
  • pepper
  • 80g watercress
  • 80g cooked mushrooms
  • 20g green onions
  • 60g goat cheese

Instructions

  • Place the cous cous in a mixing bowl with the olive oil and red wine vinegar
  • Stir through
  • Add to the bowl the picked watercress with any large stems removed
  • Add to the bowl the cooked mushrooms and the sliced green onions
  • Toss well and season to taste
  • Spoon the salad into a bowl
  • Crumble the goat cheese over the top of the salad
