COUS COUS APPLE SALAD

Ingredients

  • 120g cooked cous cous
  • 80g green apple
  • 30g raisins
  • 20g flat parsley
  • 20g pinenuts
  • 1 lemon
  • 30g olive oil
  • salt
  • pepper

Instructions

  • Wash peel and core the apple, cut into rough .5cm dice 
  • Place in a bowl with the cooked cous cous
  • Add to the bowl the pinenuts and raisins
  • Juice the lemon into the bowl and add the olive oil
  • Was and dry the parsley. Roughly chop and add to the bowl
  • Toss well and season to taste 

  • Serve immediately
