COUNTRY LOAF
Prep/Cooking Time: Longer Than 120 Minutes

- 2.25 Kilo Strong flour
- 2.25 Kilo Semolina
- 3 Ltr Water
- 50g Salt
- 50g Olive oil
- 24g Yeast
Instructions
- Place the flour, semolina, yeast and water in a large mixing bowl
- Place on the machine and set to mix on the lowest setting
- Mix for 8 minutes
- After 8 minutes add the oil and salt to the bowl
- Mix for a further 2 minutes
- After 2 minutes turn onto the highest setting and mix for 45 seconds
- Leave to prove for roughly 2 hours
- Once proved weigh to 1 kilo pieces and shape
- Once shaped coat with semolina and place in baskets
- Prove till the required size is achieved
- Turn out onto the paddle and cross the top
- Place in the oven till golden and the crust is solid
- Leave to cool naturally
