Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 2.25 Kilo Strong flour
  • 2.25 Kilo Semolina
  • 3 Ltr Water
  • 50g Salt
  • 50g Olive oil
  • 24g Yeast

Instructions

  • Place the flour, semolina, yeast and water in a large mixing bowl
  • Place on the machine and set to mix on the lowest setting
  • Mix for 8 minutes
  • After 8 minutes add the oil and salt to the bowl
  • Mix for a further 2 minutes
  • After 2 minutes turn onto the highest setting and mix for 45 seconds
  • Leave to prove for roughly 2 hours
  • Once proved weigh to 1 kilo pieces and shape
  • Once shaped coat with semolina and place in baskets
  • Prove till the required size is achieved
  • Turn out onto the paddle and cross the top
  • Place in the oven till golden and the crust is solid
  • Leave to cool naturally
