CORN CHOWDER

Prep/Cooking Time: 90-120 Minutes

Ingredients

  • 1 kilo sweetcorn
  • 200g white onions
  • 60g garlic
  • 200g potatoes
  • 120g red bell peppers
  • 2g chili flakes
  • 20g salt
  • Black pepper
  • 10g Paprika
  • 60g olive oil
  • 1.5 ltr vegetable stock

Instructiuons

  • Peel the onions and garlic and roughly chop
  • Place the oil in a thick bottom pan and heat
  • Add to the pan the chopped onion and garlic
  • Cook till the onion becomes tender
  • Add to the pan the de-seeded and chopped pepper
  • Saute for 2 minutes then add to the pan the paprika
  • Cook the spice ouit for 2 minutes
  • Whilst the paprika is cooking peel and wash the potatoes
  • Dice the potatoes and add to the pan
  • Add the corn and cover with vegetable stock
  • Bring to the boil
  • Simmer for 30-45 minutes 
  • Once the potatoes are cooked through remove from the heat and season with the salt and pepper
  • Blend using the immersion blender until roughly pureed
  • Check the seasoning and leave to cool
  • Reserve in the fridge till needed
