CORN CHOWDER
Prep/Cooking Time: 90-120 Minutes

- 1 kilo sweetcorn
- 200g white onions
- 60g garlic
- 200g potatoes
- 120g red bell peppers
- 2g chili flakes
- 20g salt
- Black pepper
- 10g Paprika
- 60g olive oil
- 1.5 ltr vegetable stock
Instructiuons
- Peel the onions and garlic and roughly chop
- Place the oil in a thick bottom pan and heat
- Add to the pan the chopped onion and garlic
- Cook till the onion becomes tender
- Add to the pan the de-seeded and chopped pepper
- Saute for 2 minutes then add to the pan the paprika
- Cook the spice ouit for 2 minutes
- Whilst the paprika is cooking peel and wash the potatoes
- Dice the potatoes and add to the pan
- Add the corn and cover with vegetable stock
- Bring to the boil
- Simmer for 30-45 minutes
- Once the potatoes are cooked through remove from the heat and season with the salt and pepper
- Blend using the immersion blender until roughly pureed
- Check the seasoning and leave to cool
- Reserve in the fridge till needed
