Ingredients
- 140g Carrot
- 130g White onion
- 300g White cabbage
- 250g Mayonnaise
- 60g White wine vinegar
- 10g Sugar
- Olive oil
- Salt
- Black pepper
Instructions
- Remove the outer leaves from the cabbage
- Peel the onion and carrots
- Shred the cabbage as finely as possible and place in a mixing bowl
- Finely slice the onion and add to the cabbage
- Now grate the carrots on the bias trying to keep the shreds as long as possible
- Add the carrots to the bowl and sprinkle with salt, mix thoroughly
- Transfer the vegetables into a sieve and leave to salt for an hour
- After 1 hour squeeze off any excess liquid and return the vegetables to the mixing bowl
- Add to the bowl the olive oil, vinegar and mayonnaise
- Mix well and add seasoning to taste
- Once well mixed and seasoned cover with plastic and reserve till needed
