COCONUT PANNA COTTA

Ingredients
- 800g coconut milk
- 100g water
- 5 leaf gelatine (12g)
- 80g sugar
- 300g pineapple + 30g sugar
- 40g shaved coconut
- 2g vanilla
- 20g mint
Instructions
- Place half the coconut milk in a pan along with the sugar
- Bring to the boil
- Soak the gelatine leaves in cold water to soften
- Once gelatine is soft remove from the water and add to the boiled coconut milk
- Stir to ensure the gelatine is disolved
- Add to the pan the vanilla, remaining coconut milk and the water
- Strain the coconut mix through a sieve
- Pour the mix into a tray and leave in the fridge to cool and set
- Peel the pineapple and cut into quarters
- Remove the core and slice the pineapple as thinly as possible
- Reserve the sliced pineapple in the fridge till needed
To serve
- Break up the panna cotta with a spoon
- Place a small amount of the panna cotta in the bottom of a glass
- Add a layer of sliced pineapple
- Add a layer of shaved coconut
- Repeat the layering
- Top with the fresh mint sprigs
