CIABATTA

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 3 Kilo Strong flour
  • 25g Yeast
  • 60g Salt
  • 1.85 Ltr Water

Instructions

  • Place the flour, Yeast and water in a large mixing bowl
  • Turn on to mix at the lowest setting
  • Mix for 6 minutes
  • Add to the dough the salt and mix for a further 2 minutes
  • Turn up to highest setting and mix for 45 seconds
  • Leave to prove for 1 hour on a floured table
  • After and hour cut and shape (do not knead, try to work as little as possible)
  • Once cut place on a tray to prove
  • When ready transfer to a deck oven and cook till golden and light
  • Leave to cool naturally
