CIABATTA
Prep/Cooking Time: Longer Than 120 Minutes

- 3 Kilo Strong flour
- 25g Yeast
- 60g Salt
- 1.85 Ltr Water
Instructions
- Place the flour, Yeast and water in a large mixing bowl
- Turn on to mix at the lowest setting
- Mix for 6 minutes
- Add to the dough the salt and mix for a further 2 minutes
- Turn up to highest setting and mix for 45 seconds
- Leave to prove for 1 hour on a floured table
- After and hour cut and shape (do not knead, try to work as little as possible)
- Once cut place on a tray to prove
- When ready transfer to a deck oven and cook till golden and light
- Leave to cool naturally
