CHORIZO AND POTATO HASH

Ingredients

  •  80g fresh chorizo
  • 180g cooked new potatoes
  • 40g red onion
  • 4g paprika
  • 10g olive oil
  • 1g chili flakes
  • 20g rocket
  • 1 egg
  • salt
  • pepper

Instructions

  • Remove the skin from the chorizo and break into chunks
  • Place the olive oil in a fry pan and heat on the stove
  • Add the chorizo to the pan and begin to cook
  • Add the crushed new potatoes and the red onions finely sliced
  • Add to the pan the paprika and chili flakes
  • Sautee till the chorizo and potatoes begin to colour
  • Season with salt and pepper
  • In a second pan fry the egg in a little oil
  • Spoon the chorizo hash onto the palte and put the rocket on top
  • Cook the egg sunny side up and place atop the hash
  • Spoon over any pan juices
