CHORIZO AND POTATO HASH
Prep/Cooking Time: 0-15 Minutes

- 80g fresh chorizo
- 180g cooked new potatoes
- 40g red onion
- 4g paprika
- 10g olive oil
- 1g chili flakes
- 20g rocket
- 1 egg
- salt
- pepper
Instructions
- Remove the skin from the chorizo and break into chunks
- Place the olive oil in a fry pan and heat on the stove
- Add the chorizo to the pan and begin to cook
- Add the crushed new potatoes and the red onions finely sliced
- Add to the pan the paprika and chili flakes
- Sautee till the chorizo and potatoes begin to colour
- Season with salt and pepper
- In a second pan fry the egg in a little oil
- Spoon the chorizo hash onto the palte and put the rocket on top
- Cook the egg sunny side up and place atop the hash
- Spoon over any pan juices
