CHOCOLATE CHILI
Prep/Cooking Time: Longer Than 120 Minutes

- 120g olive oil
- 10 kilo ground beef
- 12 red onions
- 5 red bell peppers
- 5 green bell peppers
- 20 cloves garlic
- 108g paprika
- 15g cayenne pepper
- 5g chili flakes
- 60g cumin
- 3 cans tomatoes
- 1 kilo chocolate chips
- 50g cocoa powder
Instructions
- Heat the oil in a thick bottom pan
- Add to the pan the crumbled beef
- Cook until browning
- Keep cooking till well coloured
- In a separate pan cook the diced onions and garlic
- Whilst the onions are colouring quarter and deseed the peppers
- Dice the peppers and add to the pan
- Cook for 3 minutes
- Add the onions and pepper mix to the browned beef
- Add to the pan the spices and stir through
- Cook for a minute then add the canned tomatoes to the pan
- Bring to the boil
- Add the chocolate and cocoa powder
- Stir through well
- Bring to the boil
- Turn down to a simmer
- Cook for 3 hours minimum
- Season to taste and remove from the heat
- Leave to cool then reserve in the fridge till needed
