CHOCOLATE CAKE WITH GANACHE

- 230g dark chocolate
- 170g butter
- 350g brown sugar
- 4 eggs
- 1/2 tsp vanilla essence
- 350g AP flour
- 8g baking powder
- 8g baking soda
- 2g salt
- 20g cocoa powder
- 500g milk
Instructions
- Melt together the butter and chocolate
- Place the brown sugar and egg yolks in a mixing bowl
- Whisk the egg yolks with sugar till doubled in size
- On a low speed add in the melted chocolate and butter
- Sieve all the dry ingredients together
- Add the milk to the bowl and stir through gently
- Add the dry ingredients and fold through
- In a clean mixing bowl whisk the egg whites till firm peaks are reached
- Gently fold through the mix
- Coat 2 cake tins with oil and dust with flour
- Pour the mix evenly between the two tins
- Place in a pre-heated oven at 165c
- Cook for 45-60 minutes or until a skewer will come out clean
- Remove from the oven and leave to cool naturally
Ganach ingredients
- 200g dark chocolate
- 100g butter
- 100g cream
Instructions
- Place the cream in a chick bottom pan and bring to the boil
- Chop the chocolate into small pieces
- Add to the pan the butter and chopped chocolate
- Turn down the heat
- Melt all together
- Remove from the heat and leave to cool
- As the mix cools it will begin to set
- When the mix is of a managable texture cover the cakes
