CHOCOLATE BROWNIE
Prep/Cooking Time: 45-60 Minutes

- 690g Butter
- 1380g Chocolate %60
- 1200g Sugar
- 18 Eggs
- 480g Flour
- 105g Cocoa powder
- 12g Salt
- 360g Chocolate chip
Instructions
- Put the chocolate and the butter in a mixing bowl
- Place the bowl over a pan of boiling water
- Stir occasionally till all of the chocolate is melted
- In a whisking bowl place the sugar and the eggs
- Turn on to a medium speed until the mix begins to grow
- At this point turn the machine to high and whisk the eggs to a soft peak
- Sieve the flour salt and cocoa powder in a bowl
- Once the chocolate is melted and the eggs have reached soft peak it is time to combine
- Pour the egg mix onto the flour and fold through with a whisk
- Once roughly combined add to the bowl the melted butter and the chocolate chips
- Now using a spatula fold together until evenly combined
- Once the mix is ready pour onto a paper lined tray
- Place in a pre-heated oven at 325f for 35 minutes
- After 25 minutes the top should be cooked but still gooey inside
- Remove from the heat and leave to cool naturally
- Once cooled cut into 15 pieces and wrap in plastic
- Keep refrigerated till needed
