CHILLED TOMATO SOUP
Prep/Cooking Time: 60-90 Minutes

- 1 Kilo Chopped canned tomatoes
- 200g Onion
- 40g Garlic
- 20g Chili
- 150g Celery
- 20g Basil
- 30g Olive oil
- Salt
- Pepper
Instructions
- Peel the onion and garlic and remove any stem or root
- Slice the onion and garlic and place in a thick bottomed pan with the olive oil
- Cook over a medium heat until the onions begin to color
- Add to the pan the roughly chopped chili and the celery
- Cook for a couple more minutes until the celery softens
- Now add to the pan the canned tomatoes and the basil
- Bring to the simmer then turn down and cook for 1-1 1/2 hours
- Once cooked check the seasoning adding salt and pepper to taste
- Remove from the heat and blend
- Check seasoning again then cool
- Reserve in the fridge till needed
