CHILLED TOMATO SOUP

Prep/Cooking Time: 60-90 Minutes

Ingredients 

  • 1 Kilo Chopped canned tomatoes
  • 200g Onion
  • 40g Garlic
  • 20g Chili
  • 150g Celery
  • 20g Basil
  • 30g Olive oil
  • Salt
  • Pepper

Instructions

  • Peel the onion and garlic and remove any stem or root
  • Slice the onion and garlic and place in a thick bottomed pan with the olive oil
  • Cook over a medium heat until the onions begin to color
  • Add to the pan the roughly chopped chili and the celery
  • Cook for a couple more minutes until the celery softens
  • Now add to the pan the canned tomatoes and the basil 
  • Bring to the simmer then turn down and cook for 1-1 1/2 hours
  • Once cooked check the seasoning adding salt and pepper to taste
  • Remove from the heat and blend
  • Check seasoning again then cool 
  • Reserve in the fridge till needed
