CHILLED CUCUMBER & ALMOND SOUP

Ingredients

  • 1 kilo cucumber
  • 120g raw almonds
  • 120g white onions
  • 80g WW vinegar
  • 60g olive oil
  • 200g Greek yoghurt
  • 10g salt
  • 4g pepper

Instructions

  • Place all the ingredients into a blender
  • Pulse in the blender till a smooth consisteny is acheived
  • Place in a container and reserve in the fridge till needed
  • To serve spoon into a bowl and finish with a spoon of yoghurt
