CHILLED CUCUMBER & ALMOND SOUP

- 1 kilo cucumber
- 120g raw almonds
- 120g white onions
- 80g WW vinegar
- 60g olive oil
- 200g Greek yoghurt
- 10g salt
- 4g pepper
Instructions
- Place all the ingredients into a blender
- Pulse in the blender till a smooth consisteny is acheived
- Place in a container and reserve in the fridge till needed
- To serve spoon into a bowl and finish with a spoon of yoghurt
