CHICKEN WITH MUSHROOM WHITE WINE SAUCE
Prep/Cooking Time: 45-60 Minutes

- 320g chicken breast
- 160g carrot
- 120g green onions
- 30g butter
- 120g button mushrooms
- 40g dried mushrooms
- 60g white wine
- 120g cream
- 2g salt
- 1g pepper
- 10g WW vinegar
Instructions
- Place the dried mushrooms in the white wine and leave to soak
- Slice the button mshrooms and place in a thick bottom pan with the butter
- Saute the mushrooms till they begin to colour
- Remove the dried mushrooms from the wine and finely slice
- Add the sliced soaked mushrooms to the cooking mushrooms
- Stir through then add to the pan the white wine and the WW vinegar
- Reduce the liquid by half then add to the pan the cream
- Bring to the boil
- Reduce by half
- Season to taste then remove from the heat
- Leave to cool and reserve in the fridge till needed
- Season the chicken breast and place in a saute pan in a little oil
- Cook on all sides and finish in the oven
- Whilst the chicken is cooking peel and wash the carrots and green onions
- Cut the carrots into the appropriate shapes and cook in salted boiling water
- Once cooked saute the carrots and green onions in a little olive oil
- Season and spoon into the bottom of the bowl
- Place the cooked chicken breast on top
- Reheat the mushroom sauce and spoon over the chicken
- Serve
