CHICKEN WITH MUSHROOM WHITE WINE SAUCE

Ingredients

  • 320g chicken breast
  • 160g carrot
  • 120g green onions
  • 30g butter
  • 120g button mushrooms
  • 40g dried mushrooms
  • 60g white wine
  • 120g cream
  • 2g salt
  • 1g pepper
  • 10g WW vinegar

Instructions

  • Place the dried mushrooms in the white wine and leave to soak
  • Slice the button mshrooms and place in a thick bottom pan with the butter
  • Saute the mushrooms till they begin to colour
  • Remove the dried mushrooms from the wine and finely slice
  • Add the sliced soaked mushrooms to the cooking mushrooms
  • Stir through then add to the pan the white wine and the WW vinegar
  • Reduce the liquid by half then add to the pan the cream
  • Bring to the boil
  • Reduce by half
  • Season to taste then remove from the heat
  • Leave to cool and reserve in the fridge till needed
  • Season the chicken breast and place in a saute pan in a little oil
  • Cook on all sides and finish in the oven
  • Whilst the chicken is cooking peel and wash the carrots and green onions
  • Cut the carrots into the appropriate shapes and cook in salted boiling water
  • Once cooked saute the carrots and green onions in a little olive oil
  • Season and spoon into the bottom of the bowl
  • Place the cooked chicken breast on top
  • Reheat the mushroom sauce and spoon over the chicken 
  • Serve
