CHICKEN SKEWERS

Ingredients
- 500g Free-range chicken breast
- 15g Parsley
- 15g Oregano
- 1 Clove garlic
- 25ml Olive oil
- Salt
- Pepper
Instructions
- Trim the chicken breast removing any sinue or bone
- Cut the chicken into strips roughly 4" in length
- Pick the herbs and wash under cold water
- Dry off the herbs and roughly chop
- Add the chopped herbs to the chicken along with the olive oil
- Peel the garlic and finely chop
- Add the garlic to the bowl and mix together well
- Leave to marinate for at least 2 hours
- After a couple of hours skewer the chicken with the bamboo sticks
- Reserve in the fridge till needed
To serve
- Remove the chicken from the fridge and season on both sides with salt and pepper
- Preheat a pan and add to it a little oil
- Add the chicken and fry on both sides for 2 minutes or until the chicken is cooked through
- Once cooked reserve till needed
- Serve warm or at room temperature
