CHICKEN SKEWERS

Ingredients

  • 500g Free-range chicken breast
  • 15g Parsley
  • 15g Oregano
  • 1 Clove garlic
  • 25ml Olive oil
  • Salt
  • Pepper

Instructions

  • Trim the chicken breast removing any sinue or bone
  • Cut the chicken into strips roughly 4" in length
  • Pick the herbs and wash under cold water
  • Dry off the herbs and roughly chop
  • Add the chopped herbs to the chicken along with the olive oil
  • Peel the garlic and finely chop
  • Add the garlic to the bowl and mix together well
  • Leave to marinate for at least 2 hours
  • After a couple of hours skewer the chicken with the bamboo sticks
  • Reserve in the fridge till needed

To serve

  • Remove the chicken from the fridge and season on both sides with salt and pepper
  • Preheat a pan and add to it a little oil
  • Add the chicken and fry on both sides for 2 minutes or until the chicken is cooked through
  • Once cooked reserve till needed
  • Serve warm or at room temperature
