CHEESY MASH

 Ingredients

  • Potatoes
  • Heavy cream
  • Butter
  • Strong cheddar
  • Swiss cheese
  • Salt
  • Pepper

Instructions

  • Peel the potatoes and wash under cold water
  • Cut the potatoes into a 2" dice and place in a pan with enough cold water to cover them
  • Add a generous pinch of salt to the pan
  • Place the pan on a high flame and bring to the boil
  • Cook the potatoes for 20/25 minutes or until cooked through
  • Remove from the heat and transfer to a sieve to drain off the water
  • Keep the potatoes in the sieve and bring the cream and butter to the boil in the same pan in which you boiled the potatoes
  • When the cream boils and the butter has melted, add the potatoes back to the pan
  • With the back of a plastic spoon break the potatoes and mix together with the cream
  • Add to the pan the shredded cheese and stir in well
  • Season the potatoes with the salt and pepper and place in a serving dish
  • Top the potatoes with more cheese and gratinate under the grill
  • Serve immediately
