CHEESY MASH
Prep/Cooking Time: 30-45 Minutes

- Potatoes
- Heavy cream
- Butter
- Strong cheddar
- Swiss cheese
- Salt
- Pepper
Instructions
- Peel the potatoes and wash under cold water
- Cut the potatoes into a 2" dice and place in a pan with enough cold water to cover them
- Add a generous pinch of salt to the pan
- Place the pan on a high flame and bring to the boil
- Cook the potatoes for 20/25 minutes or until cooked through
- Remove from the heat and transfer to a sieve to drain off the water
- Keep the potatoes in the sieve and bring the cream and butter to the boil in the same pan in which you boiled the potatoes
- When the cream boils and the butter has melted, add the potatoes back to the pan
- With the back of a plastic spoon break the potatoes and mix together with the cream
- Add to the pan the shredded cheese and stir in well
- Season the potatoes with the salt and pepper and place in a serving dish
- Top the potatoes with more cheese and gratinate under the grill
- Serve immediately
