CHARRED BROCOLLI
Prep/Cooking Time: 15-30 Minutes

- 4 heads brocolli
- 40g olive oil
- salt
- pepper
- 1 lemon
- 40g manchego
Instructions
- Remove the tip of the stem from the brocolli
- Cut the brocolli into 6 equally sized pieces
- Drizzle the brocolli with half of the oil
- Season with salt and pepper
- Place the brocolli on the chargrill and cook till charred around the edges
- Once charred transfer to a bowl and a cover with clingfilm
- Allow to steam with its own heat and moisture
- Once cooled add the juice from the lemon
- To serve warm slightly and place in a dish
- Top with grated manchego and serve immediately
