CHARRED BROCOLLI

Ingredients

  • 4 heads brocolli
  • 40g olive oil
  • salt
  • pepper
  • 1 lemon
  • 40g manchego

Instructions

  • Remove the tip of the stem from the brocolli
  • Cut the brocolli into 6 equally sized pieces
  • Drizzle the brocolli with half of the oil
  • Season with salt and pepper
  • Place the brocolli on the chargrill and cook till charred around the edges
  • Once charred transfer to a bowl and a cover with clingfilm
  • Allow to steam with its own heat and moisture
  • Once cooled add the juice from the lemon
  • To serve warm slightly and place in a dish 
  • Top with grated manchego and serve immediately
