CARAMELIZED SWEET POTATO SOUP

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 20g Garlic
  • 500g Onion
  • 3 * Thai chili
  • 140g Celery
  • 60g Soft brown sugar
  • 700g Sweet potato
  • 600g Potato
  • 220ml White wine vinegar
  • 50ml Olive oil
  • Vegetable stock
  • 60g Creme fraiche
  • 10g Parsley

Instructions

  • Peel the garlic and onion and roughly chop keeping separate
  • Heat the oil in a thick bottom pan and add to it the garlic
  • Cook the garlic till it begins to evenly brown then add the onions
  • Whilst the onions are cooking peel the potatoes and sweet potatoes
  • Once peeled wash the potatoes and remove any pits 
  • Roughly cut the potatoes so they will cook in a similar time
  • The onions should now be softened and beginning to color
  • Add to the pan the sugar and cook till the sugar begins to caramelize
  • Now add the vinegar and the potato pieces
  • Just cover with vegetable stock and bring to the boil
  • Cook over a medium heat until the potatoes are soft through
  • Remove from the heat and blend till smooth
  • Season to taste
  • If serving immediately ladel into dishes and add a spoon of creme fraiche
  • Top with some chopped parsley
