CARAMELISED ONION
Prep/Cooking Time: 90-120 Minutes

- 1 kilo White onions
- 60ml Olive oil
- 60g Butter
- 50g Sugar
- 60ml White wine vinegar
- Sprig Rosemary
- Sprig Thyme
- Salt
- Pepper
Instructions
- Peel and remove the root from the onions
- Finely slice all the onions and reserve in a bowl
- Place the olive oil and butter in a thick bottom pan
- Mel the butter over a medium heat and once melted add to the pan the sliced onions
- Saute the onions till they begin to soften
- Add to the pan the sugar and stir together well
- Add the herbs to the pan and continue to cook over a low heat
- Cook until the onions begin to color
- Once the onions begin to color reduce the heat and cook further till the onions are completely soft and sweet in flavor
- Add to the pan the vinegar and cook till all liquid is evaporated
- Once the liquid has gone remove from the heat and season to taste
- Reserve in the fridge till needed
