CARAMELISED ONION

Ingredients

  • 1 kilo White onions
  • 60ml Olive oil
  • 60g Butter
  • 50g Sugar
  • 60ml White wine vinegar
  • Sprig Rosemary
  • Sprig Thyme
  • Salt 
  • Pepper

Instructions

  • Peel and remove the root from the onions
  • Finely slice all the onions and reserve in a bowl
  • Place the olive oil and butter in a thick bottom pan
  • Mel the butter over a medium heat and once melted add to the pan the sliced onions
  • Saute the onions till they begin to soften
  • Add to the pan the sugar and stir together well
  • Add the herbs to the pan and continue to cook over a low heat
  • Cook until the onions begin to color
  • Once the onions begin to color reduce the heat and cook further till the onions are completely soft and sweet in flavor
  • Add to the pan the vinegar and cook till all liquid is evaporated
  • Once the liquid has gone remove from the heat and season to taste
  • Reserve in the fridge till needed
