CANDIED ORANGE
Prep/Cooking Time: 60-90 Minutes

- 800g orange
- 480g sugar
- 16g vanilla bean
- 1 ltr water
Instructions
- Wash the oranges and pat dry
- Cut the whole orange into slices and remove any visible seeds
- Cut the orange slices into rough 1cm dice (peel and everything)
- Place the orange in a pan and add to it the sugar, vanilla and water
- Bring to the boil over a high heat
- Reduce to a simmer and cook for 1 hour
- Stirring occasionally to avoid catching on the bottom
- As the oranges cook they will become tender and the liquid will reduce and thicken
- Once the liquid has reduced to just above the orange pieces remove from the heat
- Leave to cool
- Reserve in the fridge till needed
