CANDIED ORANGE

Prep/Cooking Time: 60-90 Minutes

Ingredients

  • 800g orange
  • 480g sugar
  • 16g vanilla bean
  • 1 ltr water

Instructions

  • Wash the oranges and pat dry
  • Cut the whole orange into slices and remove any visible seeds
  • Cut the orange slices into rough 1cm dice (peel and everything)
  • Place the orange in a pan and add to it the sugar, vanilla and water
  • Bring to the boil over a high heat
  • Reduce to a simmer and cook for 1 hour
  • Stirring occasionally to avoid catching on the bottom
  • As the oranges cook they will become tender and the liquid will reduce and thicken
  • Once the liquid has reduced to just above the orange pieces remove from the heat
  • Leave to cool 
  • Reserve in the fridge till needed
