CALAMARI FRITTO

Ingredients
- 200g cleaned calamari
- 40g flour
- 10g corn flour
- 2g salt
- 1g pepper
- 50ml milk
Instructions
- Ensure the calamari has been cleaned and the cartilage has been removed
- Cut the bell and lay flat on the board, keep the tentacles to the side
- Remove the beak from the tentacles
- Score the flesh of the bell and cut into 1/2" deep lengths
- Once prepared reserve in the fridge till needed
- In a bowl combine all the dry ingredients and mix well
- To serve
- Place the prepared calamari in the milk and ensure all is covered
- Drain the calamari and place in the flour
- Toss through and shake off any excess flour
- Place in the fryer and cook until golden
- Drain on paper and serve immediately
