BUTTER LOAF / BURGER BUN

Prep/Cooking Time: 60-90 Minutes

Ingredients

  • 50g Egg
  • 290g Milk
  • 50g Butter
  • 60g Sugar
  • 630g Flour
  • 10g Salt
  • 20g Yeast

  • 1 Egg

Instructions

  • Place the dry ingredients in a small machine bowl with a dough hook
  • Place the milk in a pan to warm to about body temperature
  • Crack the egg and whisk with a fork, reserve 
  • Melt the butter and reserve

  • Add the wet ingredients to the dry ingredients and mix till a smooth dough is achieved
  • Mix for 4 minutes
  • Remove from the machine and cover with a damp cloth
  • Leave till doubled in size

  • Turn out the dough onto a flat dry surface
  • Portion and shape as required 
  • For a loaf place in the oiled tin and cover wth the damp cloth
  • Leave to rise over the top of the pan
  • For buns place on a tray and cover with a damp cloth
  • Prove till doubled in size

  • Beat the egg and brush the tops 

  • Cook in a preheated oven at 360f
  • Loaf will take 40+ minutes whereas buns will take 20-25 minutes
