BURRATA WITH SOURDOUGH AND PESTO

Ingredients

  • 120g Burrata
  • 2 slices sourdough
  • 60g basil
  • 40ml olive oil
  • 15g parmesan
  • 10g pine nuts
  • 4g garlic
  • Salt
  • Pepper

Instructions

  • Place the basil and olive oil in a small blender
  • Add the parmesan, garlic and pine nuts
  • Blend to a rough pulp
  • Season to taste and reserve in the fridge till needed
  • To serve toast the sourdough in the Panini grill
  • Once grilled cut into 2 pieces and place crossed on the plate
  • Place the torn burrata on top
  • Drizzle with the pesto and serve immediately
