BURRATA WITH SOURDOUGH AND PESTO

Ingredients
- 120g Burrata
- 2 slices sourdough
- 60g basil
- 40ml olive oil
- 15g parmesan
- 10g pine nuts
- 4g garlic
- Salt
- Pepper
Instructions
- Place the basil and olive oil in a small blender
- Add the parmesan, garlic and pine nuts
- Blend to a rough pulp
- Season to taste and reserve in the fridge till needed
- To serve toast the sourdough in the Panini grill
- Once grilled cut into 2 pieces and place crossed on the plate
- Place the torn burrata on top
- Drizzle with the pesto and serve immediately
