BROWN RICE SALAD WITH ALMONDS

Ingredients

  • 160g brown rice
  • 80g celery
  • 60g apples
  • 40g almonds
  • 30g green onions
  • 60g Greek yoghurt
  • 40g lemons
  • 30g olive oil
  • 2g salt
  • 1g pepper

Instructions

  • Cook the brown rice in lightly salted water
  • Once cooked remove from the water and leave to cool on a tray
  • Once cooled reserve in the fridge till needed
  • Place the sliced almonds on a baking sheet and toast in the oven
  • Once toasted leave to cool and reserve in an air tight container
  • Wash and peel the celery, green onions and the apple
  • Slice the celery, green onions and apples and place in a small mixing bowl
  • Add the cooked brown rice
  • Add to the bowl the olive oil and lemon juice
  • Season with salt and pepper to taste
  • Spoon the mix into a bowl and top with the greek yoghurt
  • Finish with the toasted almonds
